White Bean Turkey Chili with Caramelized Butternut Squash

The evening air is a beautiful indication  that Fall is here!  And what is better than Fall, Football and Food?  One of our family favorites is White Bean Turkey Chili.  This hearty meal is blended with fresh vegetables and lean turkey meat.  You can substitute veggie crumbles or ground chicken if you like.  Play around with it.  And ENJOY!  

Preparation: Chop all veggies.  Rinse off beans and set to the side.   In a large pan heat 1 tablespoon olive oil.  Saute vegetables until soft.  Mix in meat, salt and coriander and cook until done.  Add beans.  Pour in stock and stir.  Add your slurry in and then add the balance of the milk.  Add hot sauce and garlic.  Cook for an hour.  When chili is finished, sauté squash, butter and turmeric until golden brown on edges and garnish the top of chili.  Top with a dollop of sour cream and crushed black pepper, team with a nice piece of cornbread. Enjoy!
